I love to grill chicken for the flavor and I love grilled vegetables as well. When I put the two together I have this special sandwich. Here it is!

Ingredients:3 boneless chicken breasts
Olive oil
Juice of one lemon
Pelleteris rub
1 eggplant, sliced
3 yellow squashes, sliced
1 onion, sliced
1 zucchini, sliced
1 green bell pepper, quartered
Salt and pepper
1 cup of mayonnaise
1 teaspoon of garlic salt
Fresh chives and parsley, minced
1 loaf of French bread
4 slices of provolone cheese
Romaine lettuce
Directions:
Pound chicken breasts. Coat with olive oil. Squeeze lemon juice over chicken. Grill chicken. In a bowl, add vegetables. Coat with olive oil and salt and pepper. Place on a grilling pan and grill. Mix mayonnaise, salt, and herbs. Cut fresh bread horizontally. Spread mayo mixture on top and bottom. Layer with chicken, vegetables, cheese, and Romaine lettuce.
