When I was in cooking school, one of the recipes I learned was a delightful and very versatile dish called Pipperanata ( Pip-er-a nata).

I tell people my favorite “fast food” is to get a “just -right” avocado, opened up,  seed removed,  and  the insides mushed up with a fork, a spritz of  lemon juice, salt and pepper and sometimes salsa added.

I am always looking for recipes with chicken.  If you get tired of the same-old-same-old chicken dishes, here is a creamy, cheesy and well seasoned dish that tastes like an Italian Grandma could have made it.
