The garden is presenting me with red onion, leeks, carrots and a few tomatoes.

This recipe is good for those moms who want to slip a few veggies into the meat without drawing attention to the fact the burger isn’t 100% meat - or in this case, turkey. I buy organic turkey at Cosco and freeze it for grilling during the summer. Serve this with grilled or roasted veggies and top the meal off with a peach and blueberry cobbler made with the fine fruit at Crow Mountain Orchard.

1/4 cup old fashioned oats, ground medium fine in food processor
1/2 cup  white and light green parts of a baby leek, cleaned and ground in food processor
1/4 cup finely chopped green or red pepper
1/4 cup carrot, shredded
1/4 cup salsa, medium or hot according to your taste
1 pound ground turkey, preferably organic
salt and pepper to taste
6  6-inch tortillas, flour or corn
fresh avocado slices or guacamole
dash of lemon juice
lettuce, spinach or kale, shredded
chopped red onion, optional
extra salsa for passing

Mix first seven ingredients and fry off a very small piece to taste for seasonings. Make any  adjustments needed and form mixture into six patties. Grill outdoors or broil until meat is done to your liking. Cover and set aside to rest while you prepare condiments.
2) Warm tortillas in a microwave of oven until warm. Wrap in foil and keep warm. Slice avocado and sprinkle with lemon juice to retain fresh color.
3) Shred lettuce or greens of choice and dice red onion
4) Place burgers in warm tortillas and serve with condiments.
