Want to do something fun for the kids or even the family for St. Patrick’s Day?

The following recipe will provide the kids a healthy lunch or you may serve these as appetizers before dinner. Easy to put together, they are fun and tasty to eat and gives a bit ‘o awareness to your children about the Irish tradition of celebrating St. Patrick. St. Patrick supposedly drove the snakes from Ireland. When I lived there, it was such a pleasure to not have to even think of snakes when I was gardening or hiking!
I wish St. Paddy would make a visit to Jackson County and at least take the rattlesnakes and copperheads!

Avocado and tomato rollups


2 10-inch spinach tortillas
2 avocados
1 cup Greek yogurt
1/2 cup cheddar cheese, shredded
1 lemon, juiced
1 Tablespoon flat leaf parsley, chopped, plus more for garnish
3/4 cup chopped tomato
salt and pepper to taste.

Remove avocados from skin and pits and place in a bowl with the yogurt and blend until smooth. Season with salt and pepper and then add lemon juice and blend in.
Spread the avocado mixture across 2 spinach tortillas, almost to the edge. Add tomatoes, cheese and parsley. Roll the tortilla tightly and wrap in foil. Place in refrigerator for at least one hour. (Do not leave overnight, it will become mushy. ) When ready to serve, unwrap and slice the wraps into one inch slices. Place on serving dish and garnish with more chopped parsley. Serve with tomato salsa for dipping.
