A pork loin has a mild taste and the recipe below which combines both honey and garlic elevates that mildness to a sweet and tangy flavor.

  Cooking this in a crock pot, once the initial work is done makes for an easy dinner for family or friends.  I like to serve pork with twice-baked sweet potatoes and Italian green beans.  A Waldorf salad is also a great accompaniment to this dish. 

3-4 pound loin roast, trimmed and seasoned
with salt and pepper
2 Tbsp. olive oil
20 cloves garlic, skinned
1 cup diced onion
2 Tbsp. all-purpose flour
1 cup low-sodium chicken broth
1/4 cup fresh lemon juice
2 Tbsp. Italian seasonings
 1/4 cup honey

Sear the pork in a skillet over medium-high heat until brown on all sides.  Transfer to a 6 quart slow cooker.
Add garlic to a pan and cook stirring often until brown. Remove and add to crock pot.  Add onions and cook until softened. Sprinkle flour over onions and cook 2 minutes.
Deglaze the pan with the broth, scraping the bottom to get all the browned bits up.  Stir in lemon juice and Italian seasoning.  Season with salt and pepper and bring to a boil.  Pour honey, then broth mixture over the pork. Cover slow cooker and cook on high setting 2 ½ to 3 hours or until pork is fork tender (or on low setting for 5 ½ to 6 hours).
Transfer pork to a platter, cover with foil and let rest for 5 minutes.  Pour cooking liquid into a saucepan and bring to a boil.  Reduce heat to medium-low and simmer sauce until thick – 2 to 3 minutes.  Lightly mash garlic cloves, slice pork and serve with the sauce.
