Nothing like the smell of fresh baked bread, muffins or popovers to make the house smell like Thanksgiving! 

Along with all the other delightful smells, popovers whisper “Home for the Holiday!”  The following recipe is easy and delicious so add it to your menu and watch the eyes pop when your family and friends bite into one of these delicious treats.   
I hope you all have a great holiday and hearts full of Thanksgiving for all your blessings!

1 cup all purpose flour
1/2 tsp. salt
1/8 tsp. ground cardamom
2 eggs
1 cup milk
2tsp.. each orange and lemon zest
2 Tbsp. unsalted butter, divided and melted

Whisk together flour, salt and cardamom
Whisk together eggs, milk and the zests.
Whisk flour mixture into egg mixture. Then whisk in 1 Tbsp. melted butter until smooth. Cover batter and let rest for 30 minutes.
Preheat oven with a six-cup popover pan inside to 450 degrees.
When oven is at temperature, carefully remove popover pan and brush with the remaining melted butter. Immediately pour batter into the cups filling them 2/3 full. Return to oven and bake for 15 minutes. Then reduce heat to 375 and bake 20 minutes more. Turn off oven. Remove popovers and pierce  with a knife to let off steam  Return to oven and leave in closed oven to dry for 10 minutes. Serve immediately.   
*You can find popover pans at any good kitchen store. Metal ones are the best. If you don’t want to purchase one, you may use a regular muffin tin.  It will not achieve the iconic popover shape, however, but they popovers will still taste delicious.
