Fried Shrimp Salad with Green Goddess Dressing

This is a colorful and fresh salad. The dressing sets it off. It is good enough to serve to company. I hope you enjoy this salad as much as I do

Fried Shrimp Salad
Ingredients:
1 ½ cup of Ritz crackers
½ cup of plain flour
Salt and pepper
½ cup of buttermilk
Hot sauce
1 egg
Lettuce
Tomato
Sweet onion
Green bell pepper
3 bacon slices, cooked and crumbled
Fresh basil, chopped
1 bag of frozen shrimp, peeled

Directions:
Mix together Ritz crackers, plain flour, and salt and pepper. Beat together buttermilk, hot sauce, and an egg. Dredge shrimp in buttermilk mixture and then in cracker mixture. Fry in vegetable oil until golden. Toss together lettuce, tomato, onion, peppers, bacon, and fresh basil. Add shrimp. Pour green goddess dressing on top.


Green Goddess Dressing
Ingredients:
1 ⅓ cup mayo
½ cup of parsley
2 Tablespoons of chives
2 teaspoons of white vinegar
1 teaspoon of lemon zest
2 Tablespoons of lemon juice
¼ teaspoon of pepper

Directions:
Mix together all ingredients well. Pour over Fried Shrimp Salad or any salad.
